Tomato Soup with Honey

Ingredients

  • 50g butter
  • 1 onion, finely chopped
  • 2 tins of chopped tomatoes
  • 500ml vegetable stock
  • 1 tsp cider vinegar
  • 2 tsp honey
  • 1 tsp dried thyme
  • salt and pepper
  • fresh parsley
  • double cream (optional)

Instructions

Melt the butter in a large saucepan. Add the chopped onion and cook over a low heat until softened. Add the tomatoes, vegetable stock, vinegar, honey, thyme and bring to a boil. Reduce the heat and cook for 15 minutes, then season to taste with salt and pepper.

Put the mixture in a blender (or use a hand-held blender) and mix on medium speed until smooth.

Pour the soup in a nice bowl and garnish with parsley and cream. Enjoy!
