Carrot and Honey Cake

Ingredients

  • 200g carrots peeled and grated
  • 3 eggs
  • 125g honey
  • 50g light muscovado sugar
  • 150ml sunflower oil
  • 200g self raising flour
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda

Frosting

  • 1/2 orange zest and juice
  • 50g butter (room temperature)
  • 120g icing sugar

Instruction

Preheat the oven to 180 C.

Grease a 18 x 28cm cake tin.

Beat the eggs and sugar until smooth then add the honey, oil and carrots and whisk until well combined. Fold in the flour with the baking powder and bicarbonate of soda.

Spoon the mixture evenly into the cake tin.

Bake for 30 min or until a skewer comes out clean.

Leave to cool.

Mix the orange, butter and icing sugar well. Spread the frosting over the cake.
